Marinated Satsumas

These are perfect to prepare ahead of time for Christmas, as they capture the essence of the season.


Ingredients:

  • 10 satsumas

  • 2 cinnamon sticks

  • 1 vanilla pod (split in half)

  • 1 bottle of Amaretto


Method:

  1. Carefully peel the satsumas, ensuring they remain whole. Place the peeled satsumas into a jar suitable for storage.


  2. Add the cinnamon sticks and the split vanilla pod to the jar.


  3. Pour the Amaretto over the satsumas, ensuring they are fully submerged. If necessary, top up with a little boiling water, though this is typically not required.


  4. Seal the jar and allow the mixture to infuse for at least 2 weeks. Turn the jars every 2 to 3 days to help distribute the flavours.


  5. After 2 weeks, the infusion is ready to enjoy.
